Semolina apple cake:

2 eggs
1 cup granulated sugar
1 vanilla
1 cup vegetable oil
1 cup milk
Pinch of salt
2 teaspoons baking powder
1cup all-purpose flour
1 1/2 cup fine semolina
2 big Granny Smith apples
3 tablespoons apple jam or apricot.


Preheat the oven to 300 F. Lightly grease and flour quiche or tart mold.
Peel and thinly slice the apples. Beat egg, sugar and vanilla. Add and mix well vegetable oil and milk. Add dry ingredients flour, semolina and baking powder. Pour the batter into the mold. Arrange the apple slices Bake it 30 to 45 minutes until a cake tester comes out clean. As soon as the cake comes out of the oven. gently brush 3 tablespoons of apple or apricot jam over the top of the apples.
