Chicken with raisins and onion

1 chicken cut into quarters

1 lemon cut in half

Salt

Squeeze lemon onto chicken then sprinkle with salt let sit 30 minutes in fridge .

Rinse chicken before adding to the pot .

Spices used:

1 teaspoon Ginger

1 1/2 teaspoons turmeric

1/2 teaspoon cinnamon

1/2 teaspoon salt or to taste

1/2 teaspoon pepper or to taste

Garlic cloves leave skin on them

Olive oil 3 teaspoons

1 cup raisins

3 Onions sliced

Rinse chicken off with water add to pot with oil and spices sauté 5 minutes then add 3 cups of water and simmer until chicken is almost done add 1 cup raisins and cook 5 minutes then add 3 onions sliced cook 10 minutes.

Can add carrots or sweet potato when adding raisins.

Serve with bread or over rice .

Easy Sugar Free Muffins

1 cup rolled old fashioned oatmeal run through a food processor until flour consistency

1/2 cups flaxseed meal basically run through food processor until flour consistency

1/2 cup nutritional yeast

1 1/4 cups flour can use white or whole wheat

1/4 teaspoon salt

3 teaspoons baking powder

1 teaspoon baking soda

Mix dry ingredients well

Can store dry in airtight container until your ready to use I make up several batches of dry and keep in quart jars until I want to make muffins.

Wet mixture

1 cup applesauce

1 cup peanut butter * note can use other types of butters or yogurt or applesauce or pumpkin purée just keep the liquid ratio the same

3 eggs combine wet ingredients well then add in dry ingredients

1 cup of mini chocolate chips

If using chips do not add more than 1 cup chips

I’ve used pecans pieces and cranberries 1 cup each and replaced the peanut butter with applesauce

Combine wet dry and pieces mix well place in well greased muffins tins I use Pam spray on the tins.

Bake for 20 minutes in 375F oven remove from oven and cool down store in airtight container.

Note you can mix the muffins and store the mixture in the fridge and bake next morning too.

Quick Seafood Chowder

1 pound small Shrimp

1 can of clams

1 6 ounce pack of imitation crab meat

1 16 ounce can of sweet corn

1 large russet potato

3 stalks celery

1 large onion

3 tablespoons olive oil

4 cups chicken stock or vegetable stock ( use whatever is in your kitchen)

1 teaspoon garlic powder

1/2 teaspoon pepper

Salt to taste I leave the salt out and let others adjust it to their taste

3 cups heavy whipping cream ( reserve 1 cup to mix corn starch with )

3 tablespoons corn starch

Finely chop onion, celery cube potato into one inch cubes.

In skillet* heat oil then add chopped vegetables sauté 5 minutes then add stock and simmer until potato is soft about 10 minutes.

In big sauce pot add shrimp , clams ( wash the clams first) and imitation crab meat break meat into smaller pieces add corn with the liquid .

Combine the potatoes mixture with the seafood mixture and heat until boiling then add the whipping cream heat to boil add the 1 cup mixture of whipping cream and corn starch cook for 5 minutes then turn off and serve hot with crackers.

* I use a cast iron skillet.

Allergy Testing

My post is going to be about how I have been feeling and to be quite honest I don’t feel that great.

Last Thursday I saw a neurologist because I was having daily headaches and I was unsure as to what kind the good news is that they are not migraines and the bad news is that they are classified as sinus headaches and due to my long weird history of weird reactions to medications the neurologist that it would be best to figure out exactly what was triggering my headaches so I contacted my primary doctor and she ordered a allergy blood test which means I had to stop all allergy medications so I haven’t taken any since Monday night and it’s not been fun since then I have been so itchy and sneezing my eyes hurt and feel scratchy and dry I have weird rashes popping up all over my body and I can’t stand to even smell any type of perfume or cologne it sends me into sneezing fits as do most of the plants that are blooming.

I can’t weed my garden as I planned and I’ve been basically hiding indoors to try and not feel so blah and sneeze all the time .

Will post a update when I know more.

Feeling Sad , Can’t Fast

As Salam Alikum Readers

I am feeling a bit sad and melancholy, I’ve been dealing with a few health issues and got the results of my blood work back and my ferritin levels are very low they are a ten and I had a follow up appointment with my doctor to see what it means and now I have to follow a specific diet / eating plan and am not allowed to fast this Ramadan doctors say it’s to dangerous with my iron reserves being so low. The diet / eating plan I’m on is very healthy lots of fresh leafy dark vegetables as they are high in iron beets and oranges as well a quinoa fish and oatmeal lots of red meat and eggs. Basically the doctor wants me to eat my iron and vitamins and to be honest sometimes it’s hard as I don’t feel hungry or have a appetite, I am also taking a multivitamin called alive women’s chewable and a liquid plant based iron supplement to see if this will help improve my iron stores .

I will be feeding hungry people to make up for my missed fasts , I was actually looking forward to fasting but now I have to make plans and adjust because ones health is important. I have noticed a improvement with my feet and legs since I started taking the vitamins and plant based iron supplement they don’t go numb as much .

Don’t feel inspired  

As Salam Alikum readers 

I haven’t written in quite a while and for that I’m sorry I haven’t felt inspired to write , to be honest I have been having a very hard time with my moods , as your all know I suffer from bipolar nos that doesn’t respond to medications and in 2014 I had to wean of of the medications that helped for a long while because it damaged my liver .

Since then I have been trying to mange my moods naturally and it is basically trial and error some things work and other things do not work and it’s up to me to try and figure it out , I have found some things that work , I try and avoid watching the news as it causes my moods to plummet , prayers and reading Quran help as does crocheting , washing dishes and clothes some days just the simple act of making and drinking tea helps .

I will in sha Allah try and post again soon , I guess I could make a goal to post once a week , I could post a how to make a bath scrubby pattern or maybe a recipe , we’ll have to see
