Millwee

1 cup semolina flour

1 cup white flour

1 teaspoon salt* if watching sodium intake omit the salt

1 cup warm water

Butter 1 stick soften

Olive oil 1/2 cup to pour over soften butter

Olive oil as needed for coating hands and dough

Place the flour and salt in a kitchen aide mixer mix with your hand until combined make a well in flour and add water then using a dough hook mix until blended then beat on high for 15 minutes once throughly mixed take dough out and oil well and let sit for 15 minutes then divide into ball I do 6 for this recipe coat balls in oil let rest for 15 minutes then take one ball oil hands well and surface your working on .

Note you can mix this by hand it just tires the arms and takes a while longer you mix the liquid into the flour then knead it for 15 minutes

Using hands and some of the oil and butter flatten and stretch thinly without breaking once thin rub butter and oil onto it sprinkle with a bit of semolina flour and fold into thirds thin roll into round rolls and stretch the ends and tuck into the center then set aside after you oil it , repeat until done.

Note some people just fold and make square instead of rolling into tubes and flattening either way is fine I’ll post pictures of both

To cook use a cast iron pan or if you have a Moroccan bread pan for stove top cooking use that a griddle will also work.

Heat over medium heat pan is hot enough when a few small drops of water dance and disappears

If doing the round kind flatten to about 1/4 thick cook until golden brown on one side flip and cook until golden brown

Ways to serve

Serve hot with tea can put jelly on it ,

Can store in freezer and reheat later if doing this make sure they are completely cooled down and place waxed paper between the breads then wrap in plastic wrap and place in gallon size zipper freeze bag and freeze

To thaw take out and place on counter once thawed can warm on stove top or oven

Note there’s a variation to this recipe where you add 1 teaspoon yeast and follow the same directions

Tips For Flying 

As Salam Alikum Readers

I am writing about flying in a airplane and here are some tips I’ve picked up along the way.

  1. Always pack a change of clothes in your carry on , this is especially important if your flying with children, 
  2. Gate check the stroller, wear baby / toddler in ergo carrier, if to big to wear then invest in a harness backpack we have one that looks like a monkey it will save you a lot of time and worry if you don’t have to chase a wondering toddler through the airport.
  3. If packing yogurts get the tube kind and freeze before hand and store in a lunch bag for keeping foods cold I did this and it was still frozen when I got to where I was going after 18 hours.
  4. Baby wipes for easy clean up, I use them to wipe down the seat armrests and tray
  5. Bring a pillow and blanket with you
  6. Pack a portable charger and have it fully charged for your phone or iPad 
  7. Snacks and empty bottle for water
  8. Extra pair of socks and underwear 
  9. Extra hijab 
  10. Travel in comfortable clothes 
  11. Have all your important information in one place ( I have a bag I pack my passport and flight information in with a list of emergency contacts )
  12. Something to read or do during layovers and on the flight, or headphones to watch movies if plane has them.

Know that when flying with your baby small children that you’re allowed to take them food and breastmilk, formula just tell tsa that it’s your babies food.

Horrible Airport Experience 10/27/2014

Yesterday I had a very bad experience at the airport .

My day started off good and I was excited and nervous as I was flying alone with a 15 month old went through the line got my boarding pass from the airline I was flying on then went through security and that is were I ran into issues.

The security people were not helpful and I am not fluent in Arabic , and they didn’t speak English so it was very hard the few who claimed to speak English didn’t understand me at all and there is no paging system in the airport what kind of airport doesn’t have a paging system?

The problem is over a piece of paper  apparently I forgot to get a piece of paper from the police department in the town I was staying in because I stayed more than 3 months .

They had me run all over the airport looking for my husband I had several panic attacks and dissolved into tears , They finally found my husband and the issue was almost resolved had to travel back to the town I was staying in to get dumb piece of paper.

My husband he re-booked his flight and left me with his brothers and his Brother in law . Went to claim my bags and guess what they sent one on the airplane so I don’t know if I’ll ever see it ?
I rode in the car back to the town and am now just sitting here waiting.
