Easy Sugar Free Muffins

1 cup rolled old fashioned oatmeal run through a food processor until flour consistency

1/2 cups flaxseed meal basically run through food processor until flour consistency

1/2 cup nutritional yeast

1 1/4 cups flour can use white or whole wheat

1/4 teaspoon salt

3 teaspoons baking powder

1 teaspoon baking soda

Mix dry ingredients well

Can store dry in airtight container until your ready to use I make up several batches of dry and keep in quart jars until I want to make muffins.

Wet mixture

1 cup applesauce

1 cup peanut butter * note can use other types of butters or yogurt or applesauce or pumpkin purée just keep the liquid ratio the same

3 eggs combine wet ingredients well then add in dry ingredients

1 cup of mini chocolate chips

If using chips do not add more than 1 cup chips

I’ve used pecans pieces and cranberries 1 cup each and replaced the peanut butter with applesauce

Combine wet dry and pieces mix well place in well greased muffins tins I use Pam spray on the tins.

Bake for 20 minutes in 375F oven remove from oven and cool down store in airtight container.

Note you can mix the muffins and store the mixture in the fridge and bake next morning too.

Banana Peanut Butter Oatmeal Bread

6 bananas very ripe

2/3 cups peanut butter

3 eggs

2/3 to 1 cup sugar ( I used 2/3 in my recipe )

1 cup old fashioned rolled oatmeal ran through a blender until it’s flour

1/4 cup nutritional yeast

1/2 cup flax seeds run through a blender until turns to meal

1 1/4 cups flour

2 teaspoons baking soda

1/4 teaspoon salt

Mix wet ingredients in kitchen aid mixer until smooth about 5 minutes with the paddle mixer.

Combine dry ingredients then slowly add to wet ingredients mix well

Preheat oven to 350

Grease 4 mini bunt pans and a small loaf pan , add 1 cup dough to each bunt pan then the rest of dough goes into small loaf pan .

Bake for one hour then pull out and let cool 5 minutes then remove from pans.

Quick Seafood Chowder

1 pound small Shrimp

1 can of clams

1 6 ounce pack of imitation crab meat

1 16 ounce can of sweet corn

1 large russet potato

3 stalks celery

1 large onion

3 tablespoons olive oil

4 cups chicken stock or vegetable stock ( use whatever is in your kitchen)

1 teaspoon garlic powder

1/2 teaspoon pepper

Salt to taste I leave the salt out and let others adjust it to their taste

3 cups heavy whipping cream ( reserve 1 cup to mix corn starch with )

3 tablespoons corn starch

Finely chop onion, celery cube potato into one inch cubes.

In skillet* heat oil then add chopped vegetables sauté 5 minutes then add stock and simmer until potato is soft about 10 minutes.

In big sauce pot add shrimp , clams ( wash the clams first) and imitation crab meat break meat into smaller pieces add corn with the liquid .

Combine the potatoes mixture with the seafood mixture and heat until boiling then add the whipping cream heat to boil add the 1 cup mixture of whipping cream and corn starch cook for 5 minutes then turn off and serve hot with crackers.

* I use a cast iron skillet.

Breast Pumps My Personal Review

As Salam Alikum Readers

Today I’m going to write a review of all the breast pumps I’ve tried, I’ll list the names and types of pumps I’ve tried and how I felt that they’ve worked for me personally .

Spectra love the setting of this pump , bottles are a bit oddly shaped not a fan of the one piece flanges as it’s harder to get into the pumping bras , note there are medela hacks to use medala parts with the spectra pump I’ll try them and give a review. Still playing around with the settings to figure out what personally works for me.

Medela is a good pump there are several different models I have personally tried the harmony hand pump the Lactina pump, symphony, in style pump they all work and are easy to use . There are so many different types of medala pumps and different size flanges it’s super easy to use just be very careful with the suction it’s super easy to accidentally hurt your nipples but using to much suction. Will show you the hacks I’ve used in another post in sha Allah.

Avent Manuel pump easy to use and store works great like the design.Love this design and the cushions flange pump. Not really a fan of the bottles because they are oddly shaped and a huge size even this smallest size ones.

Haakaa is a suction based cup thing that’s great for catching the second boob drips while baby nurses . Only issue I have is my baby seems to like to kick it off the other breast while she’s feeding. The suction and take a minute or so to get right .

Evenflo double electric pump it works like the extra cushion of the breast pump inserts small easy to pack design, don’t care for the one piece style flanges. I do like the extra flange cushions and I found a hack I use with medala flanges and evenflo cushions.

Amadela purely yours personal and hospital grade all I can say is don’t both they didn’t have any suction or speed even at the highest setting huge waste of time. Not a fan of the one piece flanges they are personal a pain to deal with and award to wash and get into pumping bras.like the duckbill valves and they will fit up in the medala parts I’ll show you the hack later.

Update: Dealing With Unexpected Health Issues

As Salam Alikum Readers

I haven’t been posting much and it’s been due to unexpected health issues,

The last post I did was about having gestational diabetes which is a huge pain in the butt to manage I have had to cut out almost all breads , pastas , potatoes and other starches , count my carbohydrates which is a huge pain in the butt, give myself insulin injections four times a day and poke my fingers anywhere from 4/8 times a day depending on how I was feeling .

In January I went to Morocco and got sick with the Moroccan flu it had me down for all of January and half of February there really wasn’t any medications I could safely take but thankfully I had enough sense to bring a big bottle of powdered Gatorade mix which helped a lot .

Middle of February I developed cholostasis which is a liver issue that pregnant women can get it causes unbearable itching to the mother all over hands, feet , whole body doctors gave medications but they don’t seem to be helping and since I developed cholostasis I have had to go in twice a week for nst monitoring so they can check baby girl out, during the nst testing she likes to go to sleep so they have to put a loud buzzer thing on my belly to wake her up.

Doctors have found that baby girl isn’t gaining weigh like she should be she is small last time they did growth ultrasound they said she might be 4 pound 15 ounces but she could weigh less.

My heart issues have been acting up and making it hard for me to do much of anything I’m always exhausted and short of breath .

Because of all these issues the doctors have decided to do a caesarean on the 27th of April .

I will post another update when I can .

Easy Enchiladas.

About 4 cups shredded Turkey breasts from a roasted turkey

Two big cans of green enchilada sauce

2 pounds cheese shredded white cheese

15 corn tortillas

Canola oil 1/2 cup in small frying pan heat to hot

First shred turkey in a bowl set aside

Shred cheese in another bowl set aside

Heat oil to hot then fry the corn tortillas until they turn soft remove from pan with spatula drain off oil and put on plate

In a big rectangle pan the 13 by 9 in line with aluminum foil for easy clean up.

Take 1 can of enchilada sauce open it up and pour half of it into shredded turkey and mix well

To form enchilada take a tortilla add a spoon of turkey and a pinch of cheese then roll place in pan repeat until pan is full then sprinkle cheese over the rolled tortillas and pour the can and a half of enchilada sauce on sprinkle with cheese .

Now you can do one of three things if cooking the next day then foil wrap and place in fridge until ready to cook.

This recipe freezes really well if going to freeze, do not use glass pan use a metal pan one of those take and bake pans work well. Once frozen take out of freezer the day before you want to bake thaw in the fridge then bake.

To cook preheat oven to 375F cook 45 minutes uncovered .

Note : You can replace the turkey with chicken or roast beef .

Also you can replace the green enchilada sauce with red enchilada sauce .

Serve with beans and rice along with sour cream on top.

Easy Chicken Soup

4 pieces chicken breast or thigh ( remove skin)

3 stalks of celery chopped into 1/4 inch pieces

2 carrots peeled and chopped into 1/4 inch pieces

10 cloves garlic peeled and chopped

1 onion chopped into 1/4 inch pieces

2 quarts chicken stock

1 teaspoon salt

1/4 teaspoon pepper

1 tablespoon canola oil

1/2 cup noodles

Large sauce pan

Heat oil in sauce pan add chopped vegetables, garlic, onion and salt, pepper and cook for 5 minutes then add chicken stock and chicken bring to boil lower to simmer cook 15 minutes then remove chicken pieces using a folk and knife debone the chicken and add back to the pot add the noodles cook for 5 minutes then turn off and serve in bowls hot.

Makes enough to serve 4 people.
