Banana Peanut Butter Oatmeal Bread

6 bananas very ripe

2/3 cups peanut butter

3 eggs

2/3 to 1 cup sugar ( I used 2/3 in my recipe )

1 cup old fashioned rolled oatmeal ran through a blender until it’s flour

1/4 cup nutritional yeast

1/2 cup flax seeds run through a blender until turns to meal

1 1/4 cups flour

2 teaspoons baking soda

1/4 teaspoon salt

Mix wet ingredients in kitchen aid mixer until smooth about 5 minutes with the paddle mixer.

Combine dry ingredients then slowly add to wet ingredients mix well

Preheat oven to 350

Grease 4 mini bunt pans and a small loaf pan , add 1 cup dough to each bunt pan then the rest of dough goes into small loaf pan .

Bake for one hour then pull out and let cool 5 minutes then remove from pans.

Quick Seafood Chowder

1 pound small Shrimp

1 can of clams

1 6 ounce pack of imitation crab meat

1 16 ounce can of sweet corn

1 large russet potato

3 stalks celery

1 large onion

3 tablespoons olive oil

4 cups chicken stock or vegetable stock ( use whatever is in your kitchen)

1 teaspoon garlic powder

1/2 teaspoon pepper

Salt to taste I leave the salt out and let others adjust it to their taste

3 cups heavy whipping cream ( reserve 1 cup to mix corn starch with )

3 tablespoons corn starch

Finely chop onion, celery cube potato into one inch cubes.

In skillet* heat oil then add chopped vegetables sauté 5 minutes then add stock and simmer until potato is soft about 10 minutes.

In big sauce pot add shrimp , clams ( wash the clams first) and imitation crab meat break meat into smaller pieces add corn with the liquid .

Combine the potatoes mixture with the seafood mixture and heat until boiling then add the whipping cream heat to boil add the 1 cup mixture of whipping cream and corn starch cook for 5 minutes then turn off and serve hot with crackers.

* I use a cast iron skillet.

Feeling Sad , Can’t Fast

I am feeling a bit sad and melancholy, I’ve been dealing with a few health issues and got the results of my blood work back and my ferritin levels are very low they are a ten and I had a follow up appointment with my doctor to see what it means and now I have to follow a specific diet / eating plan and am not allowed to fast this Ramadan doctors say it’s to dangerous with my iron reserves being so low. The diet / eating plan I’m on is very healthy lots of fresh leafy dark vegetables as they are high in iron beets and oranges as well a quinoa fish and oatmeal lots of red meat and eggs. Basically the doctor wants me to eat my iron and vitamins and to be honest sometimes it’s hard as I don’t feel hungry or have a appetite, I am also taking a multivitamin called alive women’s chewable and a liquid plant based iron supplement to see if this will help improve my iron stores .

I will be feeding hungry people to make up for my missed fasts , I was actually looking forward to fasting but now I have to make plans and adjust because ones health is important. I have noticed a improvement with my feet and legs since I started taking the vitamins and plant based iron supplement they don’t go numb as much .

Strawberry Date Smoothie

Thick enough to pour into a glass and eat with a spoon or slowly sip, 

This smoothie is a naturally sweetened strawberry milkshake that can’t be topped. 

Yield: (3) 8-ounce servings 

1 cup milk 

2 medjool dates, pits removed 

1 small banana 

12 frozen strawberries 

Pour milk into the blender and add the dates. 

Blend until the dates are dissolved into the milk, about 30 seconds. 

(The goal is to have a sweetened base for the smoothie, without chunks of dates.) 

Add the banana and berries.

 Puree until the smoothie is thick and smooth.

Dealing With Mood Changes …..

As Salam Alikum Readers

I haven’t been writing as much as I would like , I have been struggling with a few things . Feeling connected to my children is one of them , let me explain here a bit in depth, myself and my husband decided it would be best for their education if they went to school in Morocco and before February of this year I was with the children then I had to return to the USA and I’m missing my children, I chat with them through WhatsApp and get tons of pictures but it’s not the same as holding and hugging them chasing them around the house , I miss the mundane chores and activities I did with the children I miss them jumping on me in the morning and running to show me their latest drawings as well as their latest boo boo even if said boo boo doesn’t actually exist.

Another thing I’ve been struggling with is my health still trying to figure out why I get stomach aches because of this I have decided to remove cows milk out of my diet which is a lot harder than it sounds. I ran out of milk a few days ago and asked my husband not to buy anymore milk , he doesn’t really drink milk but he loves buttermilk but milk and buttermilk are completely different and I don’t care for the taste of buttermilk , I do like goats milk and it doesn’t upset my stomach so I just switched types of milk. I’m also trying to give up added sugar so today was the last day of the sugar I don’t plan on buying more don’t really have a need for sugar in my house my husband is diabetic and shouldn’t eat sugar so no more sugar for us. Also trying to decrease the amount of breads we eat there are healthier options aside from bread and breads turn into simple sugars when broken down by the body.

Mushroom And Greenbean Stir Fry 

Murshoom and green bean stir fry 

Ingredients needed for dish 

12 ounce pack greenbeans cut into smaller pieces 

1 small box mushrooms 

1 tablespoon Canola oil 

1/4 sesame seed oil

1 tablespoon soy sauce 

Pepper to taste 

To prepare 

  1. Boil pot of water blanch greenbeans for 5 minutes then plunge into ice cold water , 
  2. Set aside :
  3. Peel 6 cloves garlic finely chopped (I peel garlic then lay on cutting board and smack with flat side of knife to flatten then I chop it finely 
  4. Slice one small box mushrooms .
  5. In wok or skillet heat up oil over medium low heat 
  6. 1 tablespoon canola oil plus 1/4 teaspoon sesame oil for flavor 
  7.  Add mushrooms and garlic cook two minutes 
  8. Then add green beans and 1 tablespoon soy sauce 
  9. Cook until tender serve hot or cold
