Fish Tagine

Fish TagineSalmon 

1 pound (bones and skin removed) 

4 roma tomatoes, peeled and sliced long wise

1 onion  peeled cut in half then sliced 

2 tablespoons Olive oil

1/2 teaspoon ginger

1/4 teaspoon salt, and pepper. 

1 tablespoon turmeric, 

2 big peices garlic

2 potatoes peeled and quartered. (I use small potatoes if potato is big cut in half then quarter and only use 1 ) 

2 carrots peeled and halfed make carrots same size in lenght as potatoes 

Fresh cilantro, and parsley; finely minced 2 tablespoons 

I chop the parsely and garlic and cilantro, in a food processor, 

Place oil in tagine ( I use a metal one for fish)

Lay the sliced tomatoes down then lay down the sliced onion 

Spread the chopped cilantro, parsley, and garlic down then 

Sprinkle the spices over add the fish peices then 

Add pototoes and carrots on top of fish

Slowly, add water just a small amount 

Bring to boil lower heat to 2 and simmmer slowly for about 2 hours. 

Serve with bread .
